Easy No-Bake Elderberry and Peanut Butter Granola Bars

No-Bake Peanut Butter Granola Bars with Elderberry Syrup

When you're short on time, reach for this easy no-bake recipe. Peanut butter granola bars are a hearty snack packed with protein and perfect for busy families. Plus, Sambucol Black Elderberry Syrup for Kids adds some powerful immune support* for a healthy snack on the go!

Ingredients:

  • 2 Tablespoons Coconut Oil
  • 1 Cup Creamy Peanut Butter
  • ½ Cup (one 4-Ounce Bottle) Sambucol Black Elderberry Syrup for Kids
  • 3 Cups Old-Fashioned Rolled Oats
  • 1/8 Teaspoon Salt
  • Sprinkles (Optional, for Garnish)

Directions:

Line an 8x8 inch square baking dish with aluminum foil or parchment paper and lightly grease; set aside.

Set a medium saucepan over low heat and add the coconut oil. Once melted, stir in the peanut butter and half of the Sambucol Black Elderberry Syrup. Mix thoroughly to incorporate, cooking gently until bubbles begin to form around the edges. Slowly incorporate the remaining syrup.

Once the whole mixture is fragrant and bubbles begin to form across the surface, add the oats and salt. Use a large spatula to fold the dry ingredients into the wet, until thoroughly coated. Transfer to your prepared pan and smooth the mixture out into an even layer. You may need to lightly grease your spatula to prevent it from sticking.

Add sprinkles on top, if desired, pressing them gently onto the surface. Move the pan into your freezer until firm and completely chilled; 25–30 minutes. Use a very sharp knife to cut out even rectangles in 3 columns and 6 rows, making 18 bars in all.

Store in an airtight container, either individually wrapped in plastic or separated by layers of parchment paper, in the fridge for 5–7 days.
