Sparkling Champagne Jello Shots with Elderberry Syrup

Let's be real. Jello shots are fun no matter what the occasion! They're also super easy to make. These jello shots have the added bonus of Sambucol Black Elderberry Syrup, which means they carry an extra shot of antioxidants for immune support.*
Champagne and infused vodka elevate these jello shots even more. Top them with edible glitter or confetti for an Instagram-worthy batch of jello shots. You can get creative with the glitter depending on the occasion.
Makes 8 Shots
- Edible Glitter and/or Edible Confetti (Optional)
- 2 Teaspoons Agar Powder
- 2 Cups Champagne or Sparkling Wine
- 1/4 Cup Vanilla or Lemon-Infused Vodka
- Sambucol Elderberry Syrup
Set 8 (1.5-ounce) shot glasses and sprinkle a tiny bit of edible glitter on the bottom, if using. You could also use mini foil cupcake papers in mini muffin pans if you would prefer a disposable vessel.
Place a medium saucepan over medium heat, and whisk together the agar, champagne or sparkling wine, and vodka. Stir vigorously to make sure there are no clumps remaining. Bring the mixture right to the brink of a full boil before turning off the heat.
Carefully distribute the hot liquid between your prepared shot glasses, but be sure to leave some room for the elderberry syrup. If using edible glitter, you’ll see it swirl in and mix together instantly, of its own accord.
Let cool to room temperature, about 30–40 minutes, and top with Sambucol Elderberry Syrup. Carefully move the shot glasses into the fridge. Do not worry if it still seems completely liquefied at this point.
Chill for at least 1–2 hours before serving, until firmly set. Run a paring knife around the edge of the gel to loosen. Sprinkle with additionally edible glitter or confetti, if desired, just before serving. Cheers!
