4th of July Star Fruit Skewers with Black Elderberry Yogurt Sauce (Vegan)

These skewers look adorable and make the most out of summer fruit! They are easy to make and lots of fun! Perfect for July 4th or any occasion!
- Fruits of your choice. I like pineapple (because it’s easy to cut into fun shapes), strawberries, blueberries and blackberries.
- Vegan yogurt - I chose a blueberry cashew milk yogurt
- 1 TBS Sambucol Black Elderberry Syrup per 5 oz of yogurt
- 1 TBS agave per 5 oz of yogurt
Wash and dry all berries and cut pineapple into long strips. In honor of the July 4th holiday, I cut my pineapple into star shapes using two different size star cookie cutters. One side had a sharp edge, making it easy to cut fruit.
Next, I started adding fruit into the pattern I want on the skewer. The big star on top looks really festive.
Finally, I stirred the yogurt to make it smooth and added 1 TBS Sambucol Black Elderberry (for the berry taste and antioxidant benefit) and 1 TBS agave for added sweetness.
