Chia Seed and Granola Parfait

1/2 cup chia seeds

2 1/2 cups light coconut milk

2 tbsp maple syrup

1 cup granola (your favorite; a coconut macaroon flavor is used here)

1/2 cup mango puree or any other fruit puree

4 tbsp Sambucol Black Elderberry Syrup

Place chia seeds, maple syrup, and coconut milk in a large bowl, and stir until everything is combined. Place in the fridge for at least 2 hours. To easily make the fruit puree, take any fresh fruit of your choice and blend it until smooth. If the puree is too thick add a splash of water to get the desired consistency. Frozen fruit can also be used. 


To prepare for serving, layer chia seed pudding, granola, Sambucol Black Elderberry syrup, and fruit puree in a jar, glass or bowl. Makes 4 servings.
